Simple Homemade Roasted Peanuts

Roasted peanuts is a versatile dish that is good on its own or as a snack. It goes well with beer, Nasi Lemak (A Malay rice recipe), as a side dish and as a part of many other Asian dishes or add a last touch to enhance the flavour

Ingredients
  

  • 2 cups Raw Peanuts
  • 2 tbsp Cooking oil
  • 1 tsp Salt

Method
 

  1. 1. Wash the raw peanuts thoroughly.
  2. 2. Add the peanuts to a pan and stir in the oil.
  3. 3. Stir fry on medium-low heat until peanut skin turns light brown in colour.
  4. 4. When the peanuts starts to give a popping sound, add in the salt and continue to stir.
  5. Finish when peanut skin turns brown in colour.

Notes

Optional Variations

  1. Crispy style: Bake at 220°C for the last 5 minutes.

  2. Asian-inspired: Add ½ tsp sesame oil and sprinkle sesame seeds after baking.

  3. Mediterranean: Add oregano + a splash of balsamic vinegar.

  4. Vegan “buttery” version: Toss with 1 tsp nutritional yeast before baking.

  • As a side dish with rice or potatoes

  • On toast or in wraps

  • Tossed into pasta or salads

  • As a biryani or pilaf topping
